Anchovy is one of the healthiest and most sustainable foods on the planet with more Omega-3s and calcium than any other fish, and no mercury thanks to its place on the food chain and short life; it has a high protein content, is rich in unsaturated fatty acids.
That mouthwatering umami found in dishes that use cured anchovies comes from the glutamate developed in the salting process. During months of lying-in salt, the fish are transformed by enzymes and good bacteria into a salty, briny powerhouse, with little to zero fishy taste left behind.
